HOW TO PREPARE A NIGERIAN DISH SERIES: EDIKAN IKON SOUP


     EDIKAN IKON SOUP
Edikan ikon soup is one of the favourite soups that has its origin in the south- south geopolitical zone of Nigeria.
      Typically, it is a delicious dish that can be classified as one of Nigeria's pride.   Though simple, it's nutritional quality and value is superlative.
     It is a traditional cooking of the people of Akwa- Ibom state of Nigeria.The state, founded on September 23rd, 1987, consists of minority tribes of Nigeria that were mostly sliced out of the old Rivers and Cross-river states with Uyo as the seat power.
       The state boasts of several ethnic groups like the Ibibio, Efik, Anang to mention a few distributed into 31 local government areas.
       Their cooking is as delicious as the hospitality of the people. There are a number of sumptuous dishes and soups originating  from the AK kitchen, no wonder visitors usually wish they could stay a little longer especially males. Those who manage to settle there may decide to be espoused to a beautiful damsel of the soil. The assumption is that, AK damsels are synonymous with good cooking.
       A tour of the restaurants or eateries will fulfill your dreams and leave you ordering for more. Little wonder the state slogan is aptly coined, THE LAND OF FULFILLMENT.

Below is the popular Edikan Ikon in the pipeline;

LIST OF INGREDIENTS:
 
1. Ikon (Pumpkin leaf) washed and sliced
2.Waterleaf  washed and Sliced
3. Beef (Boiled)
4. Dried Stock fish (Boiled)
5. Smoke - dried fish, washed
6. Pomo (Boiled cow skin)
7. Periwinkle 
8. Palm oil 
9. Sufficient Onions
10.  Crayfish (Grinded) 
11.  Fresh pepper (Blended) 
12. Seasoning cubes
13. Salt to taste

METHOD OF PREPARATION
STEP 1. Heat palm oil for few seconds
STEP 2. Add sliced onions, pepper, crayfish and fry for two minutes.
STEP 3. Add beef, dried fish, stock fish allow to stand for 3 minutes and add pomo, periwinkle and stir slowly for 60 seconds.
STEP 4. Add water leaf and stir. allow to cook for 4 minutes then add ikon leaf and stir.
STEP 5. Add salt  and seasoning to taste, stir and allow to cook for 5 minutes. add water if desired.
STEP 6. Congratulations!!! your Edikan ikon soup is ready.
It may be served with pounded yam, eba, fufu or  semovita as desired.
